In the realm of wholesome snacking, dips and crackers have long been some of my all-time favorites. Their versatility offers a world of flavor possibilities. Today, I'm excited to introduce you to a delightful twist on a classic hummus. Instead of chickpeas, we're using baby lima beans. And, in place of traditional crackers, we're pairing this savory dip with homemade bagel chips made from Plantiful Kitchen's Grain-Free, clean-ingredient Everything Bagels.
Both the bagels and the beans are rich in protein, making them ideal partners for a satisfying and wholesome snack. But there's more to this recipe than just protein. It's also packed with fiber, contributing to better gut health. Speaking of fiber, did you know that our bagels contain a whopping 9g of fiber per serving?
Pro tip: If you're aiming for beans that are gentler on your stomach, I recommend using dried beans and soaking them overnight before cooking. This extra step may take some time, but it's well worth it for improved digestibility. However, if you're short on time, canned beans are a convenient alternative. My personal go-to is Jovial Foods Beans, as they soak and pressure cook their beans to enhance digestibility. If beans are an absolute no-go for you, try using cauliflower
As part of my Sunday meal prep routine, I often whip up a batch of this delicious dip to enjoy throughout the week.
Ingredients:
- 15-oz baby lima beans (or your preferred white bean)
- 1/3 cup tahini
- Zest from half a lemon
- Juice from half a lemon
- 1/2 tsp sea salt
- 2 cloves of roasted garlic – you can use fresh garlic, but use less as it's more potent
- 2 tbsp chopped fresh dill
- 2 tbsp fresh parsley
For Serving:
- 2-3 Plantiful Kitchen Everything Bagels – cut into thin slices, brushed with olive oil, and air-fried at 390F for 4-5 minutes until crispy and golden brown, or baked in the oven at 350F for 10 minutes or until crispy
- Crudité
Instructions:
1. Prepare the Bagel Chips: Begin by slicing the bagels into thin slices. Brush them with a light coating of olive oil.
2. Crisp to Perfection: You have two options for achieving crispy bagel chips: either air-fry them at 390°F for 4-5 minutes until they turn golden brown or bake them in the oven at 350°F for approximately 10 minutes, or until they become crispy.
3. Gather your Dip Ingredinents: In a blender, combine white beans, tahini, lemon zest, lemon juice, salt, garlic, and olive oil.
2. Achieve Creamy Perfection: Blend until the mixture turns creamy, making sure to scrape down the sides as needed. The blending time can be adjusted to your preference – less for a chunkier texture and more for a smooth dip.
3. Infuse Freshness: Add the chopped dill and parsley, and pulse once more to incorporate these fresh herbs.
4. Serve and Enjoy: Your Baby Lima Bean Dip is now ready to be enjoyed! Serve it alongside the crispy bagel chips and fresh crudité for a delightful and satisfying snack.
Whether you're hosting a gathering or simply seeking a wholesome snack, this dip is sure to hit the spot. Enjoy! 🌱🥯
