Hello Plantiful Kitchen patrons! Today I would like to share with you a little about my story before we get into our delicious bagel sandwich recipe. In 2015 I discovered that I was gluten-free, back when grocery store shelves were not nearly as crowded with gluten-free alternatives as they are now. And on top of this, I also learned I have food intolerances related to dairy and eggs. If you have dealt with food intolerances for as long as I have, then you probably understand the struggle of finding products 10 years ago. Attempting to buy food that did not upset your stomach and also tasted good? Well, let’s just say I’ve had my fair share of alternatives that left me dissatisfied. It’s not like I had people around me steering me towards products that tasted like the real deal as I am the only one in my family with food intolerances.
Initially into the dietary change, I completely omitted the alternatives because they just weren’t the same. I watched people around me eat the foods that I used to love and that’s when I really dove into cooking and baking. I started learning how to adapt recipes to fit my dietary needs and I discovered a whole new passion locked inside me. With each successful recipe, I started to realize that gluten-free, dairy-free, and egg-free eating doesn’t have to be boring or tasteless. In fact, some of these recipes are well-loved by my friends and family who don’t have any food intolerances.
Quick and Easy Lunch
One of my favorite quick lunches to whip up is this gluten-free and vegan loaded veggie bagel sandwich, and for this recipe I am featuring Plantiful Kitchen’s incredible bagels. I love Plantiful Kitchen Bagels because not only are they gluten-free and vegan, but they're made with simple, wholesome ingredients. There's no added junk, which can be hard to find with gluten-free alternatives. I enjoy toasting them and layering on hummus, mashed avocado, crunchy vegetables, leafy greens, and a squeeze of fresh lemon juice. Not only does this sandwich taste fresh and flavorful, but it’s loaded with nutrient dense ingredients that will make your body feel good too. I also love that it’s a totally versatile dish, allowing you to incorporate whatever you have laying around. Feel free to swap out different vegetables, change up the type of greens, or switch out the hummus flavor to create a totally different array of flavors. And the bagel, our foundation for this meal, is packed full of fiber and protein. The perfect nourishing compliment to a meal that’s anything but boring or tasteless.
LOADED VEGGIE BAGEL SANDWICH (gf, vegan)
Ingredients:

Hummus, any flavor

Avocado, mashed
-
Cucumber, peeled

Bell Peppers, seeds removed

Fresh spinach or mixed greens

Fresh Lemon Juice
Directions:

Cut your bagel in half and toast your slices to the desired crispiness.

While the bagels are toasting, prepare your other ingredients. Mash your avocado, and cut the cucumber and bell peppers into thin slices.

Assemble your sandwich by layering the toasted bagel with your favorite hummus and mashed avocado. Add the fresh vegetables and a squeeze of lemon juice. Put your halves together, and enjoy!
