Bruschetta: Whipped Ricotta, Honey, and Toasted Walnuts

Ingredients:

  • Plantiful Kitchen Sesame or Everything Bread
  • 1/2 cup ricotta cheese (plant-based, such as Kite Hill)
  • 2 tablespoons almond milk
  • Drizzel of Honey
  • 1/4 cup Walnuts

Directions:

  1. Slice your loaf of bread thinly. Toast your bread until crispy (an air fryer is helpful for faster cooking time).
  2. Add ricotta cheese and almond milk to a food processor. Combine until the mixture becomes smooth and fluffy.
  3. Toast your walnuts: preheat oven to 350° F. Roast walnuts for 7-10 minutes.
  4. Combine the ricotta cheese mixture with the honey and toasted walnuts. Spread on top of prepared bread and enjoy!

Bruschetta: Greek Salad

Ingredients:

  • Plantiful Kitchen Bread  Sesame or Everything Bread
  • 2.5 oz of Feta (Trader Joe's has a delicious plant based Feta cheese or use regular if you prefer)
  • 1/2 English Cucumber
  • 1 cup of Cherry Tomatoes
  • 2 TBSP Olives
  • 2 TBSP Olive oil
  • 1/2 tsp dried Oregano
  • Salt to taste

Directions:

  1. Slice your loaf of bread thinly. Toast your bread until crispy (an air fryer is helpful for faster cooking time).
  2. Dice the cucumbers, tomatoes, and olives. Combine with the crumbled feta, olive oil, oregano, and salt to taste.
  3. Spread on top of prepared bread and enjoy!

 Bruschetta: Whipped Cinnamon Maca Butter with Berries

Ingredients:

  • Plantiful Kitchen Bread Sesame or Cinnamon Loaf
  • 1/4 cup Jem's Cinnamon Maca Almond Butter (you can also use a chocolate Hazelnut Spread)
  • 3oz Labneh (we used Cocojune)
  • Fresh berries of your choosing

Directions:

  1. Slice your loaf of bread thinly. Toast your bread until crispy (an air fryer is helpful for faster cooking time).
  2. Add the nut butter and labneh to a food processor. Combine until the mixture is creamy and fluffy.
  3. Chop your berries. 
  4. Spread the whipped nut butter on top of prepared bread and top with the fresh berries. Enjoy!
