Blueberry Lemon Toast on Paleo Bread

Hello readers! This week we are bringing you another delectable collaboration, this time for a recipe using our new limited edition Golden Flutterbread. As we discussed in last week’s blog, this paleo bread features butterfly pea flower powder and turmeric for a superfood explosion. And now, with the help of Rob and Haley Wall of @WALLEATS, we have this beautiful recipe that perfectly complements our new loaf. It’s a combination of zesty and sweet for a wonderful burst of flavor, including ingredients like acai dairy-free cream cheese and homemade wild blueberry jam. We will discuss the health benefits of blueberries and acai in a moment, but first let’s learn a little about the Walls.

Rob and Haley Wall are a husband-and-wife duo who met while attending graduate school in Arizona; Rob for physical therapy and Haley for occupational therapy. As the two spent more time together, they discovered their shared love of food by visiting local farmer’s markets, dining at new restaurants, and eating delicious home-cooked meals, courtesy of Rob. As self-professed foodies and also healthcare professionals, these two have always been mindful about what goes into their bodies. These two definitely believe in committing to a balanced lifestyle.

They moved to Dallas in 2022, and only one year later created @WALLEATS. Their inspiration sprung from a mixture of Texas culture, Rob’s passion for developing mouth-watering recipes (he’s self-taught!), and Haley’s enthusiasm for finding cleaner food products to help them feel their best. The main purpose of WALL EATS is to inspire others by providing homemade recipes, cleaner ingredient options, and resources on clean and ethical products.

They also enjoy that our bakes are gluten-free, yet still flourish with delightful taste and texture. We are therefore honored to share this blueberry lemon toast recipe, featuring homemade jam and acai dairy-free cream cheese.

Aside from flavor, the following recipe is special because of the multitude of health benefits. Last week we focused on the merits of butterfly pea flower powder and turmeric, so now let’s examine some of the other fresh ingredients. Like acai! Is acai really a superfood? Oh yes; especially considering they have more antioxidants than other fruits that boast them, like strawberries and blackberries. Acai berry benefits also include supporting heart health, assisting those with certain cancers, and it is a terrific source for unsaturated fat and fiber. Blueberry health benefits are also many and varied. They help in heart disease prevention, lower blood pressure, support immune health, and more. Blueberries are packed full of nutrients, classifying them as superfoods as well. So please enjoy this recipe filled with superfoods and flavor! 

Ingredients:

-Plantiful Kitchen Golden Flutterbread, toasted

-Acai dairy-free cream cheese (recipe below)

-Homemade wild blueberry jam (recipe below)

-Fresh blueberries

-Lemon zest

-Honey, drizzled

-Fresh basil, chopped

-Salt

Homemade Wild Blueberry Jam Ingredients:

-2 cups frozen wild blueberries

-¼ cup honey

-1 tbsp fresh lemon juice

*makes ~1 cup of jam

Dairy-Free Acai Cream Cheese Ingredients:

-1/4 cup of your favorite dairy-free cream cheese

-2 tbsp acai powder

Directions:

  1. Prepare homemade wild blueberry jam by placing frozen wild blueberries, honey, and lemon juice in a small pan and bring to boil on high heat.
  2. Reduce heat to low/medium and continuously stir ~10 minutes until ingredients thicken.
  3. Remove from heat and continue to stir another 5 minutes.
  4. Add to a sanitized jar with lid and place in refrigerator to cool and continue to thicken.
  5. Add dairy-free cream cheese and acai powder to a small bowl and mix well.
  6. Assemble the blueberry lemon toast by spreading acai cream cheese on the Golden Flutterbread toast, and top with wild blueberry jam, blueberries, lemon zest, honey, fresh basil, and salt.
