Last week, we introduced our newest product, the limited edition Wake Up! Bread, a collaborative effort with the amazing Jen Smiley. I can’t get enough of this bread, so I wanted to take this opportunity to share some clean eating recipe ideas that compliment this exceptional grain-free loaf. Our newest product features garlic, rosemary, and lemon zest, making it ideal for savory recipes at any time of the day. One of these recipes include ingredients with lean meat, but you can always make substitutions to meet your individual dietary needs. For example, if a recipe calls for turkey, you can use a plant-based meat alternative. Just make sure to check your labels to ensure your substitutes follow clean-eating guidelines and contain no unpronounceable ingredients.
So, without further ado, here is our list of gluten-free foods and snacks to enjoy with Wake-Up! Bread. These first few recipes are for open-faced sandwiches. They were a cumulative effort with Jen as we experimented with our new bread, and we hope you enjoy!
Open-Faced Sandwiches:
Dairy-Free Cream Cheese, Turkey Breast, and Tomato: Spread the cream cheese and top with sliced turkey breast and tomato.
Cream Cheese and Zucchini: Spiralize half a zucchini and dress it with olive oil, lemon juice, salt, and pepper. Spread your cream cheese (we used Monty’s dairy-free cream cheese) and add the zucchini. Top with lemon zest and chili flakes.
Avocado and Heirloom Tomato: Slice tomatoes. Mash avocado, add salt and lemon juice. Spread on bread, and top with the diced tomatoes, thinly sliced red onion and salt and pepper to taste.

Here are some of my favorite pairings that follow grain-free and dairy-free guidelines. These ideas are incredibly simple and delicious!

Wake Up! Bread Croutons (instructions here): Turn the bread into croutons to top your favorite summer salads. No need to add extra seasonings; the bread has all the flavor!

Grilled Apricots and Ricotta: Toast a slice and top with ricotta and grilled apricots. Add a drizzle of balsamic glaze. Your taste buds will marvel at this sweet-savory combination.

Bruschetta or mini Pizza Base: You know what I love about bruschetta? The freshness. And you have literally endless flavor options (there is a restaurant in San Diego that bases their entire menu on bruschetta’s). Combine that with our new flavorful bread, and you have an unforgettable flavor explosion. Or top it with tomato sauce, cheese and your favorite toppings for mini pizzas.
