Taste the Sweetness of Summer with These Easy Gluten-Free Toast Recipes 🍑🍓

I have been hearing people lamenting the end of the summer recently with kids heading back to school and fall coming up in September. But we still have a couple months of hot weather, especially where I am in San Diego! Summer is still shining down on us, and it’s my favorite season. Not only do we get warm and sunny weather, but we also get the peak season for produce.

So don’t hang up those beach towels just yet because we are bringing you some amazing recipes that utilize that produce. They create a feeling of freshness that will make it feel like summer in your house, no matter the time of year. Bright and flavorful fruit brings with it images of lounging or playing in the hot sun. Creamy spreads cut the tartness and remind of us summer sweet treats. Now, let’s talk about the advantages of starting your morning with fruit. Fruit is good for you at any time of the day, but I like it as part of my breakfast for several reasons. First, fruit is generally high in fiber, so our body needs little energy to digest it. High fiber is also important for cleansing our GI tract, creating a much happier gut microbiome. It’s also full of vitamins and antioxidants, so the list of benefits from fruit is extensive. It helps prevent certain cancers, assists joint and muscle pain, heart failure, and more. And of course, fruit contains natural sugars. It can therefore provide a steady source of energy throughout your day.

For many of us though, glucose in the morning might come with blood sugar spikes, followed by a fast plummet. So as you are looking for healthy fruit recipes for your summer, remember to pair your fruit with various other kinds of nutrients. More fiber is always a good call, and healthy fats and protein will help slow down your sugar absorption. This will help you avoid those spikes!

Baked Yogurt Toast with Summer Berries

Ingredients (for two slices):

  • 2 slices Plantiful Kitchen Sesame Seed Bread

  • 1 egg

  • 3-4 tbsp Cocojune Yogurt

  • Pinch of Salt

  • Pinch of Vanilla Powder

  • Dash of Cinnamon

  • 1 tsp Honey

  • Fresh Berries

Directions:

  1. Preheat your air fryer to 390°F. You can also use an oven at the same temperature.

  2. Mix together the egg, yogurt, salt, vanilla cinnamon and a touch of honey.

  3. Spread mixture onto the bread, then place your berries of choice on top. Put your slices in an air fryer (or oven). Cook for 8-10 minutes

  4. Once done, add a drizzle of honey, or other topping of your choice.

 

Mango Ricotta Bagels

Ingredients:

  • Plantiful Kitchen Plain Bagel

  • Butter (can use Monty’s dairy-free butter)

  • Dairy-free Ricotta (we like Kite-Hill)

  • Mango

  • Coconut Flakes

  • Seeds of choice on top (chia seeds, hemp seeds, etc.)

  • Honey

Directions:

  1. Slice your bagel in half, and spread butter on each half. Fry in a pan to give it a good toast. (If you are dairy-free, you can substitute extra virgin olive oil).

  2. While your toast is frying, cut up your mango into slices.

  3. After you have reached your desired level of crunch, remove the bagels from heat and spread the dairy-free ricotta on each slice.

  4. Add the mango slices, then top with the coconut flakes, seeds, and a drizzle of honey.

 

Grilled Peaches and Toast

Ingredients:

  • Plantiful Kitchen Sesame Seed Bread

  • Butter

  • Peach Slices

  • Dairy-free Ricotta (can use cottage cheese if not dairy-free)

  • Basil

  • Chili Crisp or Balsamic Glaze (optional)

  • Honey

Directions:

  1. Spread butter on your bread slices, and grill both the bread and the peaches on each side.

  2. Now spread the dairy-free ricotta on each slice of toast and top it with the grilled peaches.

  3. Drizzle with chili crisp, add basil, and a touch of honey.
