In recent posts, I explored some recipes that are great for autumn. This recipe for pumpkin butter, also a perfect fall treat, comes courtesy of Carolina Gelen. You can find her video on the prep here. Utterly delightful and simple, the butter compliments the Herbs de Provence bread with a comforting aroma and splendid flavor. I made some adjustments to the ingredients, as you will notice below, to keep things on the healthier side. Scrape this butter across a warm slice of our bread for a sweet and savory meal.

  • Add the pumpkin puree, pumpkin spice, and vanilla extract in a pan over medium heat. Cook down, stirring frequently, for 15-18 minutes, or until thickened and smooth. You are trying to cook out the water from the puree, so once it stops visibly steaming, you can remove it from the heat. Scoop out into a bowl, and set aside to cool.

  • Once room temperature, combine the butter and coconut sugar in a stand mixer – can also use electric mixer, or whisk by hand – and whisk until the sugar is fully incorporated.

  • Add the spiced pumpkin puree to the butter mixture, and mix until incorporated.

  • Serve the butter on a toasted piece of our Herbs de Provence garlic bread, and top with the roasted sunflower and pumpkin seeds. The butter can be served right away, or stored in the fridge.
