Brunch Board with Grain Free Bagels
Brunch is not just a meal; it’s a chance to bring people together over some delicious food. And what better way to connect with your loved ones than creating a beautifully arranged brunch board for them. Think charcuterie board, but our base will be Plantiful Kitchen’s vegan and gluten-free bagels, artfully surrounded by spreads and nutrition-packed toppings and sides. Our board will feature lean protein from jammy eggs, plenty of vitamins and minerals from an array of vegetables, plus fiber and antioxidants from fruit. Colorful, imaginative, and inviting, this diverse selection of flavors will bring people together for a delightful experience.
Ingredients:
- Two everything bagels, toasted
- Two plain bagels, toasted
- Monty’s Cream Cheese
- Peanut butter
- 2 Heirloom tomatoes
- 1 Avocado
- Arugula and micro greens
- 4 Jammy eggs
- Everything but the bagel spice
- Blueberries
- Strawberries
- 1 Banana
- Cacao nibs
- 4 Persian cucumbers
- Pickled onions
Directions:
1. Make pickled onions: finely slice 1 red onion, and add juice from half a lemon, half a teaspoon of Himalayan salt, and a half teaspoon of maple syrup. Massage, and let sit for 30-60 minutes.
2. Make jammy eggs: bring a pot of water to a boil. Carefully lower your eggs into the pot, and set your timer for 7-7.5 minutes. After they’re done, transfer your eggs to an ice bath and leave them in there for 3 minutes. Peel carefully and slice in half.
3. Slice bagels in half and toast them to preferred crunchy texture. Slice up the various vegetables and fruits.
4. Arrange the bagels and all your sides and dips on a large plate or board. Enjoy!
