We all know eating affects how we feel but what actually happens inside our bodies when food hits the system? It can be a mystery. Sometimes we feel great after a meal, other times sluggish, bloated, and foggy. Recently, some of our customers with diabetes shared something surprising: their blood sugar barely budged after eating our Plantiful Kitchen foods. That got us curious enough to dive deeper, and thus, the Plantiful Body Lab was born.

So what’s the Plantiful Body Lab? It’s our playful, experimental corner where we mix healthtech, digital health devices, and good old curiosity to peek behind the curtain of digestion, blood sugar, and healthy eating. We’re not just guessing - we’re measuring, learning, and sharing what works best to keep blood sugar balanced.

Okay, quick science check: blood sugar is the glucose floating in your bloodstream - the main fuel your body runs on. Glucose comes mostly from the carbohydrates in the foods we eat, including grains like wheat that contain gluten. Gluten itself is a protein and doesn’t directly raise blood sugar, but foods with gluten, like breads and bagels and other baked goods, often contain carbohydrates that break down into glucose. When blood sugar spikes too high or drops too low, trouble follows. Ideal blood sugar keeps energy steady, mood stable, and helps avoid long-term health issues. For most people, that means keeping blood sugar within a balanced range, avoiding those wild rollercoaster rides after meals.

And guess what? What you eat and how you eat it makes a huge impact. For example, in the Body Lab, a typical brunch with friends (mocktail, bread basket, caesar salad, prawns, no dessert) sent blood sugar soaring to 250, which is definitely a red flag. Surprisingly, fruit eaten alone caused a noticeable spike too.

Turns out, order matters. Starting your meal with veggies or snacking on them while cooking slows sugar absorption. Follow that with protein and complex carbs, then dessert if you like. Your blood sugar won’t jump as high, and you’ll feel more balanced.

It’s one of the few universal truths we share, and beyond just filling our bellies, food deeply shapes how we feel, how our bodies function, and even how we connect with the world around us. Yet, despite eating multiple times a day, the mysterious inner workings of our body responding to each meal can feel like a mystery. Sometimes we walk away energized and clear-headed, other times we slump into a post-meal fog or feel that infamous “hangry” dip. But what’s really going on inside after we eat? How does what we put on our plates affect the balance inside us?

We got sparked by a simple yet powerful question after hearing from other customers with diabetes who tried Plantiful Kitchen: their blood sugar didn’t spike at all. Zero drama. That’s rare and remarkable because blood sugar swings can wreak havoc on health. So, naturally, we got curious and that curiosity led to the creation of the Plantiful Body Lab, where we’re combining health technology, digital tools, and a sprinkle of kitchen magic to understand how food influences our inner world.

This isn’t just for people with diabetes or blood sugar issues; blood sugar balance impacts mood, energy, focus, and long-term wellness for everybody. By sharing what we learn, we hope to empower you and the rest of the Plantiful family and community with knowledge to eat more intuitively, joyfully, and with better health results.

Blood Sugar 101: What Is It and Why Should We Care?

Blood sugar, or blood glucose, is the sugar your bloodstream carries after digesting food. It’s the main fuel for your brain and body cells. But like most things in life, balance is key. If blood sugar spikes too high, your body responds by releasing insulin, a hormone that lowers sugar by moving it into cells. But repeated high spikes and insulin surges can lead to insulin resistance which is a stepping stone toward diabetes and other health problems.

On the flip side, if blood sugar dips too low, you get shaky, irritable, foggy, and experience low-energy. Ideally, after a meal, your blood sugar rises moderately and steadily enough to fuel your body without sending you on a rollercoaster ride.

What does a “good” blood sugar look like?

For most people, a post-meal blood sugar below about 140 mg/dL (milligrams per deciliter) two hours after eating is ideal. Above that, especially persistently, signals stress on your system.

Our Surprising Body Lab Findings So Far

When we started testing meals on ourselves, we uncovered some eye-openers:

1. Typical social brunch = big spike
One memorable test involved a “normal” brunch: started with a mocktail, a bread basket, then a Caesar salad with prawns, and no dessert. The result? A blood sugar spike up to 250 mg/dL. That’s high and concerning and way above the sweet spot.

2. Fruit first can cause spikes
Eating fruit alone or as the first thing on our plate surprisingly shot blood sugar higher than expected. The natural sugars in fruit can cause quick rises when not buffered by other foods.

These insights tell us: It’s not just what you eat, but how and when you eat it.

The Power of Food Order: Why Sequence Matters

The order you eat your foods affects how quickly glucose enters your bloodstream. Here’s the magic formula we’ve found:

Start with vegetables.
Snacking on or starting a meal with fiber-rich veggies slows down digestion and sugar absorption. Fiber acts like a gentle brake, smoothing blood sugar curves.

Then protein and complex carbs.
Protein and healthy fats further moderate blood sugar spikes and keep you full longer. Complex carbs, like whole grains and legumes, release glucose slowly compared to refined starches.

Dessert last (if at all).
By saving sugary treats for the end, you prevent a sudden sugar rush and give your body time to handle earlier carbs and proteins.

This simple sequencing can make the difference between a blood sugar spike and steady, balanced energy.

From our experiments, the best meals for stable blood sugar look something like this:
